Deep Dish Banana Pudding – Don’s Favorite
My husband LOVES Banana Pudding. Today, I’m sharing his favorite recipe. I’m telling you, when I make this I have to give half of it away immediately or he would eat every spoonful of this dreamy dish.
Easy to make and prep time is quick but it seems to take a long time (in Don’s mind anyway) because of course, it has to refrigerate for about 3 hours before serving. Last time I made this, he set his phone timer so he would know when to come in to scoop up the first serving.
Ingredients:
The crumb mixture is made with crushed Nilla Wafers, chopped pecans, brown sugar, cinnamon and butter. Spread the mixture out on a baking dish and until golden brown (about 8 to 10 minutes). Stir halfway through.
Beat pudding mixes and milk with whisk for about 2 minutes and then stir in 1 cup of Cool Whip.
In a deep dish, layer 1/3 of the crumb mixture, bananas and pudding. Repeat.
Using your mixer, beat cream cheese and granulated sugar in medium bowl until well blended. Gently stir in 1 cup of Cool Whip. Spread this sweetness over the top of your dreamy dish then sprinkle the remaining crumb mixture over the top.
Refrigerate for about 3 hours (or as long as I can keep Don out of it).
Serve in individual dishes (if Don hasn’t run off and hid the entire bowl), topped with a whole Nilla Wafer and more Cool Whip.
- 40 Nilla Wafers (plus additional wafers for garnishing individual servings)
- ½ cup chopped pecans
- ⅓ cup packed brown sugar
- 1 tsp ground cinnamon
- 4 Tbsp butter, melted
- 2 pkgs (3.4 oz each) Vanilla Flavored Instant Pudding
- 2 cups cold milk
- 1 8 oz container Cool Whip (thawed)
- 3 large bananas
- 1 8 oz package Cream Cheese (softened)
- ¼ cup granulated sugar
- Preheat oven to 350 degrees
- Crush the vanilla wafers by putting them in a plastic ziplock bag and using a rolling pin. Do Not pulverize them, just crush them.
- Mix the crushed wafers and the next four ingredients (pecans, brown sugar, cinnamon and butter) in a bowl and then spread them out on a parchment lined baking sheet. Bake for 8 to 10 minutes or until golden brown. Stir about half way through.
- While the crumb mixture is cooling, beat the pudding mixes and cold milk (only 2 cups) in a medium bowl with a whisk for about two minutes. Get your muscles out because the pudding mixture will be thick. Stir in one cup of the Cool Whip.
- Once the crumb mixture is cool, layer ⅓ of the crumb mixture and half of the bananas and pudding in a deep dish (2 qt bowl will work). Repeat the layers.
- With your mixer, beat the cream cheese and granulated sugar in a medium bowl until well blended. Gently stir in one cup of Cool Whip.
- Spread the cream cheese and sugar mixture over the top of this dreamy dish and sprinkle the remain crumb mixture on top.
- Refrigerate for 3 hours.
- Serve in individual dishes with a whole wafer or two and a spoonful of Cool Whip.
