Celebrating National Oatmeal Month WITHOUT Cookies
Believe it or not, Oatmeal isn’t just for breakfast or for cookies (I know that breaks some people’s hearts).
As we continue to celebrate national Oatmeal Month, I’ve not only found 30 great recipes for some tasty treats, I’ve also got a great one that we made yesterday and it is pretty easy and really yummy.
Hubby and I are trying to eat less processed foods and more “from scratch or almost scratch” recipes. We whipped up these delicious Strawberry Oatmeal Squares. They taste just like Special K Strawberry Bars. Making them in our kitchen together was fun and we’re saving on our grocery bill too. And did I tell you how good they were?
Beat the soft margarine with electric mixer. When it is light and fluffy begin to gradually add the brown sugar and continue to beat until mixed thoroughly. Add vanilla and beat a bit more.
Stir in the oats, wheat flour, salt and baking soda.
Use an 8-inch square baking pan. Firmly press 2 cups of the oat mixture into the bottom of the pan. Bake at 375 degrees for 5 minutes.
While the “crust” is baking, combine sugar and cornstarch in a saucepan and then stir in strawberries. Bring this sweet mixture to a boil, stirring constantly until it is thickened and bubbly.
Spread the strawberry mixture over the oat mixture crust and then top with the reserved oat mixture.
Bake again for 15 – 18 minutes. Let cool completely.
Cut into squares and enjoy!

- ⅓ cup margarine, softened
- ⅔ cup firmly packed brown sugar
- 1 teason vanilla extract
- 1 cup regular uncooked oats
- ⅔ cup whole wheat flour
- ½ teaspoon baking soda
- ⅛ teaspoon salt
- 2 tablespoons sugar
- 1½ tablespoons cornstarch
- 10 ounce package frozen strawberries in light syrup (thawed)
- Beat margarine at medium speed until light and fluffy.
- Gradually add brown sugar to margarine.
- Add vanilla and continue to beat.
- Stir in oats, flour, baking soda and salt.
- Firmly press 2 cups of the oat mixture into an 8 inch square baking pan.
- Bake at 375 for 5-8 minutes
- While crust is baking, combine sugar and cornstarch in a medium saucepan.
- Stir in strawberries.
- Bring to a boil, stirring constantly, until strawberry mixture is thick and bubbly.
- Spread strawberry mixture over oatmeal crust.
- Top with remaining oat mixture.
- Bake at 375 for 15 - 18 minutes.
- Let cool completely!
- Cut into squares.
