Strawberry Oatmeal Squares

- ⅓ cup margarine, softened
- ⅔ cup firmly packed brown sugar
- 1 teason vanilla extract
- 1 cup regular uncooked oats
- ⅔ cup whole wheat flour
- ½ teaspoon baking soda
- ⅛ teaspoon salt
- 2 tablespoons sugar
- 1½ tablespoons cornstarch
- 10 ounce package frozen strawberries in light syrup (thawed)
- Beat margarine at medium speed until light and fluffy.
- Gradually add brown sugar to margarine.
- Add vanilla and continue to beat.
- Stir in oats, flour, baking soda and salt.
- Firmly press 2 cups of the oat mixture into an 8 inch square baking pan.
- Bake at 375 for 5-8 minutes
- While crust is baking, combine sugar and cornstarch in a medium saucepan.
- Stir in strawberries.
- Bring to a boil, stirring constantly, until strawberry mixture is thick and bubbly.
- Spread strawberry mixture over oatmeal crust.
- Top with remaining oat mixture.
- Bake at 375 for 15 - 18 minutes.
- Let cool completely!
- Cut into squares.
